We can often blame the media for sensationalizing food studies and misinterpreting or misreporting their methodology and findings. But sometimes, flawed methodology and badly contextualized findings come together to create the perfect storm. When news headlines recently erupted with claims that “89% of avocado oil products are fake or diluted,” consumers were understandably outraged. These media stories were ridiculously instant and overly aggressive, saying that big food brands are systematically scamming health-conscious shoppers by cutting expensive, single-origin avocado oil with cheap industrial seed oils. Except, if you actually read past the press release and look at the parameters of the study out of UC Davis, a completely different story emerges. Pay close attention to the word “products” as it reveals how the media creates clickbait headlines that while not false, are entirely misleading.

The researchers didn’t uncover a secret avocado oil conspiracy. Instead, they designed a study that tested multi-ingredient processed snacks, bottled dressings, and mayonnaises. These are products where oil blending is standard, legal, and functionally necessary. Yet, the researchers declared the presence of secondary oils to be “adulteration.” By conflating standard product formulation with deliberate “food fraud,” the study practically invited the media circus that followed.
The “Gotcha” Study Design
In this case, we get a two-for-one. Not only are the news stories misleading but the UC Davis Study itself is an example of a study that never needed to exist and presents a complete failure to contextualize the foods tested and thus a failure to educate consumers instead of needlessly alarming them. Here is a basic summary of the findings:
- Salad Dressings: 100% “failed” purity checks.
- Potato & Tortilla Chips: 93% “failed” purity checks.
- Mayonnaises: 71% “failed” purity checks.
Notice what is missing from that list? Actual bottles of pure avocado oil. When a consumer reads that “89% of avocado oil products failed purity testing,” their immediate assumption is that 9 out of 10 glass bottles of avocado oil sitting on grocery store shelves are cut with canola oil or some other oil. But testing a processed tortilla chip or a shelf-stable ranch dressing for “oil purity” is fundamentally flawed. In fact, it’s downright silly. These are complex, multi-ingredient foods manufactured under entirely different regulatory standards than single-ingredient cooking oils. And, if any of these products actually used 100% olive oil, they would have to be sold at a price-point that negated their existence in the first place.
By lumping processed snacks into a blanket “adulteration” metric, UC Davis created a sensationalized headline rate that tells us nothing about the actual bottle of cooking oil in your pantry, and everything about how academic institutions format research to maximize public relations exposure.

Cashing In on a Health Trend vs. Scientifically Flawed Research
To be clear, there is no denying that food manufacturers actively exploit consumer health trends. When a brand puts “Made with Avocado Oil” in giant letters on the front of a chip bag while burying “Canola Oil” in small print on the back, they are deliberately capitalizing on avocado oil’s reputation as a healthy monounsaturated fat. They’re charging a premium price for a product formulated with cheap seed oils.
Calling out misleading marketing tactics is entirely fair game. But misleading marketing does not exucse a flawed, sensationalized study design.
The issue isn’t whether food companies are greedy or whether label laws need tighter enforcement. The issue is that UC Davis ran a chemical analysis on complex, processed multi-ingredient foods, found standard industrial formulation practices, and slapped a blanket “89% Food Fraud” label on the entire category.
By failing to separate standard oil blending in processed snacks from actual adulteration in pure cooking oils, the study actively invited misinterpretation. Instead of creating a panic button for news outlets to press, it is much more effective to educate the public on how to read and interpret food labels.
It is also worth noting that this isn’t the first time UC Davis has released research framed in a way that generates widespread consumer confusion. The university has built a bit of a habit out of publishing sensationalized “gotcha” findings that prioritize media splash over practical context. We saw it years ago with their famous olive oil purity study, which left millions of consumers convinced that almost every bottle on supermarket shelves was fake, and we saw it more recently in their study on DIY Corsi-Rosenthal box air purifiers, where flawed “air volume” math completely distorted how effective those homemade filters actually are in real-world rooms. When an institution repeatedly outputs research that relies on skewed metrics, it stops looking like an isolated oversight and starts looking like a deliberate public relations strategy. It’s not that their laboratory data is wrong, it’s that raw measurements are never a substitute for critical thought, food science context, and basic regulatory literacy.
What FDA Label Laws Actually Say About Avocado Oil
The core flaw in labeling standard food formulations as “fraud” is a complete misunderstanding of how the Food and Drug Administration (FDA) regulates multi-ingredient packaged goods.
When a brand sells a bottle of cooking oil, it must meet single-ingredient identity standards. If it says “100% Pure Avocado Oil,” it cannot legally contain canola, soybean, or sunflower oil. However, when avocado oil is used as a secondary ingredient in processed foods, like potato chips, mayonnaise, or salad dressings, an entirely different set of labeling rules applies.
“Made With” Claims Are Not “100% Pure” Statements
Under current FDA labeling guidelines, a front-of-package claim like “Made with Avocado Oil” simply means the product contains avocado oil as an active ingredient. It is not a guarantee or a legal representation that avocado oil is the only fat used in the recipe.
Furthermore, the phrasing itself isn’t remotely unclear. Any reasonable consumer understands the basic English meaning of “made with.” If a jar of mayonnaise proudly displays “Made with Cage-Free Eggs” on the label, no sane person opens the jar expecting to find a solid container of pure eggs. Pretending as if a multi-ingredient snack or dressing labeled “Made with Avocado Oil” should contain zero other fats is a failure of basic reading comprehension. Designing a study to expose the fraud in such a statement is somewhat beyond the pale, in my qualified estimation.
Unless a package explicitly states “Fried in 100% Pure Avocado Oil” or “Made Exclusively with Avocado Oil,” manufacturers are legally permitted to blend oils. Blending high-oleic sunflower or canola oil alongside avocado oil is standard practice to manage shelf-life stability, prevent oil separation in room-temperature dressings, and keep retail price points realistic for the average consumer.
The Ingredient List Rule (By Weight)
For consumers looking to cut through front-of-package health halos, the FDA already provides a clear mechanism: the ingredient list. By law, ingredients must be declared in descending order of predominance by weight.
- If avocado oil appears before canola oil, avocado oil is the primary fat by weight.
- If canola oil appears before avocado oil, avocado oil is a minor secondary ingredient used primarily for flavor or marketing appeal.
This standard practice of listing ingredients by weight further exposes the scientific gaslighting of such “gotcha” studies. Testing a chip for “purity” when the ingredient listings already explicitly reveal that the chip is not made with 100% avocado oil and also lists the secondary oil(s) used is entirely missing the point. Such a study is simply an exact confirmation of the ingredient list.
The Price-Point Paradox and Market Reality
Beyond labeling laws and formulation chemistry, there is a fundamental economic reality that these studies completely ignore: the consumer value-expectation threshold.
Pure avocado oil is an expensive, labor-intensive fat, often costing four to eight times more per pound than commodity seed oils like canola, soybean, or sunflower. Consumers understand this trade-off when buying an actual bottle of cooking oil or salad oil. They’re willing to pay $12 to $15 for a bottle of cold-pressed, single-origin oil because it serves a specific culinary purpose.
However, that willingness to pay absolutely does not extend to the snack and condiment aisles:
- The Price Ceiling: A shopper might tolerate paying $4.50 for a bag of potato chips cooked in an avocado oil blend, compared to $3.50 for standard chips. But they will not pay $12.00 for a bag of chips fried exclusively in 100% pure, unblended avocado oil.
- The Shelf-Life and Stability Barrier: From a food science perspective, pure unrefined avocado oil has a distinct flavor profile and a lower oxidation stability window when exposed to air in packaged snacks. Therefor, blending it with high-oleic sunflower or canola oil is necessary not only for cost control but for preventing the avocado oil from going rancid on store shelves while also creating a neutral flavor base.
If manufacturers were to create potato chips, shelf-stable ranch dressings, or commercial mayonnaises made exclusively with 100% pure avocado oil, the retail price tag would immediately price the product out of existence AND the flavor would be overly influenced by the oil.
The Palatability Conundrum: Why 100% Pure Oils Fail the Taste Test
A perfect example of this palatability conundrum is commercial olive oil mayonnaise. Consumers often wax poetic about the idea of pure olive oil mayo, only to be shocked by the reality when made at home. One hundred-percent extra virgin olive oil produces an aggressive, heavy mayonnaise that tastes strongly acidic, bitter, and intensely pungent. Virtually no home cook or chef uses exclusively olive oil for mayonnaise. They blend a splash of olive oil into a neutral canola base to make it palatable. Commercial brands blending oils for mayonnaise or dressings certainly save a lot of money by not using only olive oil. But in so doing, they also create product that people will actually want to eat more than once. The same holds true for products made with any strongly flavored oil, including avocado oil.
Even when a specialty snack uses 100% avocado oil, consumers are rarely getting the boutique, unrefined oil they envision. To withstand industrial frying temperatures and avoid giving chips an overpowering grassy flavor, manufacturers rely on heavily refined, bleached, and deodorized (RBD) avocado oil. The refining process strips away the very antioxidants, color, and flavor that made the oil desirable in the first place. A study testing whether ‘pure’ avocado oil snacks are using chemically stripped industrial oil versus true cold-pressed oil would offer genuine consumer value, unlike testing a multi-ingredient dressing for secondary seed oils that are already disclosed on the label.
Real-World Price Reality
Even when such chips use RBD avocado oil, they still charge an outrageous premium for a cheaper oil that literally comes in barrels. The market already tells us how consumers react to pure avocado oil, cold-pressed or not. A specialty bag of chips cooked exclusively in 100% avocado oil costs over 70 cents per ounce for a tiny 5-ounce bag. Meanwhile, standard kettle chips sell at around 30 cents per ounce for an 8-ounce bag. Expecting mass-market brands to deliver 100% single-origin purity at commodity prices ignores basic grocery economics. No average family is taking home $12-a-pound potato chips on a weekly basis.
Demanding that everyday commercial snacks meet the same single-origin purity standards as high-end cooking oils while expecting them to sit at a mass-market price point is asking for the impossible. When research institutions test these products without framing the economic and physical constraints of manufacturing, they feed an unrealistic outrage loop.
True consumer protection doesn’t come from sensational headlines claiming your chips are “fake.” Such headlines dominate the news cycles for a brief period and then fade. True consumer protection comes from basic food science literacy. It comes from understanding that front-of-package marketing highlights an ingredient, while the back-of-package nutrition panel tells you what’s actually used to make the product.
